1. The thread test

Lift a spoon of honey and let it fall. Pure honey is thick and falls in one slow, continuous thread that folds on itself. Watery honey that splashes or breaks quickly may be mixed.

2. The water test

Put a spoon of honey in a glass of room temperature water without stirring. Pure honey usually settles at the bottom as a lump. Mixed honey often starts dissolving quickly.

3. The thumb test

Put a drop on your thumb. Pure honey stays in place. If it spreads or runs off easily, it may be thin or mixed.

4. The crystallisation test

Most pure honey crystallises (becomes thick and grainy) in cold weather. This is a natural sign, not a sign of spoilage. Honey that stays perfectly liquid for years in the fridge may have been heated or mixed.

5. The taste and smell test

Pure honey has a natural floral smell and a taste that changes with the flower source. Honey that tastes only of plain sugar is suspicious.

6. The label and price test

Very cheap “pure” honey is a warning sign. Good honey takes a lot of bee work to produce. Check the source, flower type and packing date.

Types of honey in Pakistan

  • Beri (Sidr) honey: the most prized, with a rich taste.
  • Phulai (Acacia) honey: light and mild.
  • Sarson (mustard) honey: crystallises quickly, creamy texture.
  • Wild flower honey: mixed flowers, varied taste.

  1. Keep it in a clean, tightly closed glass jar.
  2. Store at room temperature, away from sunlight.
  3. Always use a dry spoon.
  4. If it crystallises, place the jar in lukewarm water to soften it. Never microwave or boil honey.

The honey and darchini tradition

Honey with darchini (دار چینی / cinnamon) is a popular combination in desi homes. A common way is a spoon of honey and a pinch of cinnamon powder in warm (not hot) water in the morning. It is a comforting, traditional drink, especially in winter. People with diabetes should be careful with honey and speak to their doctor.
